Profile

My research focus is on land and water resources development & management leading to sustainable ecosystems, agriculture, and water and food security. The continuous increasing global population will put more pressure on land and water as they are the most important natural resources, as far as water supply, agriculture and ecosystem sustainability are concerned. Our works address the greatest challenge that scientists, engineers, economists and policy makers face today is guaranteeing water and food security for the ever increasing global population while managing land and water resources without damaging the vital eco-systems.

Dr. Thu Huong (Nicole) Pham

I completed PhD in analytical chemistry from University of Wollongong, NSW, Australia. During my doctorate research I contributed in the development of three mass spectrometric techniques namely OzID (ozone-induced dissociation), CIDn/OzIDn (combination of collision-induced dissociation and OzID) and RDD (radical-induced dissociation) in studying the small alternation in lipid structures and their impact on lipid metabolism. After graduation I have 3-year postdoc experience in University of California, Riverside, USA.

I’m currently working at Memorial University of Newfoundland (MUN) as Adjunct Prof. and Research Associate to develop analytical methods applying to a broad range of functional compounds including proteins, lipids, antioxidants, and evaluation methods in functional food research.

Charles is from Ghana and has a chemistry background. He joined the group in May 2017 and is working on developing the berry industry in the Province for his PhD. He is into his 2nd year in the program. When he is not working on his research Charles loves to bike and cook.

Currently, he is an Assistant Professor in Environmental Science (Biochemistry) at Grenfell Campus, Memorial University of Newfoundland.

My research focuses are (i) food production and formulation development in the climate of NL province, (ii) sprouted fodder, herbs and veggies cultivated under control environmental system and (iii) hydroponics system.

I am Supuni Purnima Gamage from Sri Lanka. I am a graduate student in the department of Boreal Ecosystems and Agriculture Science. I have graduated from the Bangalore University, India and completed the Masters in Food Science and Nutrition from the University of Peradeniya. I have worked for the past five in industries related to manufacturing of herbal supplements, nutraceuticals, FMCG on scopes of research and development, new product development, product commercialization & marketing and quality assurance. I am looking forward to working on functional food and nutraceutical product development which supports the well being of mankind.

Dr. Ibrahim M. Abu-Reidah

I hold a Ph.D. in Food analytical chemistry from Granada University, Spain. My research theme has been focused on the identification of phytochemical compounds (mainly phenolics) from different highly consumed plant-derived foods and herbs in search of valuable and promising foodstuff and functional foods. MSc degree in Olive-growing and olive oil technology, MSc in Food Quality and Technology, BSc in Food science and Technology. I have carried out different research stays after PhD. I worked as an Assistant Prof. in the departments of Chemistry, Nutrition & food technology, and Nursing.  During the time at Memorial University of Newfoundland (MUN) as Postdoctoral fellow, my work was to progress activities related with food truck program of Association of New Canadians, secondary food processors, and refugees to develop innovative food products for production processes and analysis.

Melissa has background as Bachelor’s of Science in Environmental Science: Biology. She has completed Masters of Science under the supervision of Dr. Raymond Thomas and Dr. Peter Stewart. She worked closely with Natalia Prieto- Vidal (post-doctoral supervisor) on food science related research. Her work focused on the sensory, nutritional and functional qualities and safety of grilled food.

I am PhD student from the University of Limerick, Ireland. The aim of my research is to develop functional foods and nutraceuticals with antithrombotic properties. As part of my research funded by the Ocean Frontiers Institute (OFI), my work focused on identifying antithrombotic and cardioprotective polar lipids in food-grade salmon oil nutraceuticals.
